Katinka is a purple/blue early-season plum variety, and one of the most commercially-important varieties grown in Germany.
Katinka plums can be eaten fresh, and stay fresh for several days. They are also good for cooking with - the stone comes away cleanly and the flesh is dry and retains its texture.
Katinka ripens just after another popular purple/blue early-season variety, Herman, and is a good alternative.
